Job Purpose:

Under the general guidance of the Cost Controller & the Assistant Director of Purchasing, you are responsible for storing, issuing, maintaining and accounting for all Store supplies and for maintaining cleanliness of the stores area as per Municipality standards

Duties & Functions:

To check daily receiving and store keeping procedures to ensure they are being followed.
To check goods to see they are received , issued ,documented , stored and requisitioned as per company guidelines
To coordinate with other departments regarding storeroom operational matters where necessary.
To issue stocks /supplies to personnel presenting duly approved requisition forms according to SOP.
Maintain Filing of Requisition forms, ensuring that they are properly filled up and acknowledged by the requesting party. .Original copy of the Requests are forwarded to cost control.
Accepts and acknowledges deliveries received by the Receiving agent.
Ensures that all items stored in the Freezers are properly packed in plastic bags and labelled with corresponding tags.
Inspects all stocks regularly to determine probability of spoilage and segregates these for priority issuance.
Ensures that we always maintain stocks within our approved Par stock.
Market List are updated with the stock of all Freezer items daily to help the chef in ordering Frozen items.
To analyze problem areas , recommend practical solutions and monitor the results on a continuous basis.
To check and verify all reconciled inventory reports with book balance and actual count and unit costs
To assist the F&B Director, Executive Chef and other department heads wherever necessary.
Manages time effectively by meeting deadlines on time.
Conducts daily briefing of the staff.
Works closely with executive Chef and Kitchen stewarding to ensure the highest standards of Hygiene is maintained at all times at all the Storage areas.
Performs work as assigned by Executive Chef
Perform other duties assigned by the Cost Controller /chief accountant or other seniors.

Duties & Functions:

To be available for health counseling and guidance whenever required.

Ensures that communication trail is observed at all times.

Job Purpose:

Under the general guidelines of the Director of Sales, the Sales Manager solicits transient and group business that enables Mondrian Doha to meet and/or exceed set revenue goals in rooms, events, meetings, conferences and food and beverage.

The Sales department is responsible for selling the hotel and providing a relationship-oriented atmosphere for the client, who would book business into the hotel. The Sales Manager will have a defined sales territory, market segment(s), account list and/or may partner in a job-sharing setting. Their primary function is to book business from their prospecting and solicitation efforts and respond to inquiries. Based on assigned territory and market segment, it’s expected that a significant portion of time be devoted to new business development.



Duties & Functions:

Solicit new and existing accounts to meet/exceed revenue goals through telephone solicitation, outside sales calls, site inspections and written communication
Meet or exceed personal sales solicitation call goals based on a minimum of 5 daily appointments covering existing and prospective accounts
Responsible for administration of all support services including but not limited to responding to emails and correspondence, input and maintenance of databases
Maintains a high profile within trade and professional associates dealing with their market area/segment(s)
Interacts with individuals outside the hotel within their sales area including, but not limited to clients, local hotel associations and other members of the local community

Duties & Functions:

Develop and deliver work programmes for projects, managed on a day-to-day basis to provide the senior finance team with regular scheduled updates.
Schedule meetings internally and externally to set clear objectives for projects and collect and disseminate information to achieve these objectives;
Produce accurate and timely data in report format including power-point, word and excel for presentation to the Executive and Management teams.

Job Purpose:

Under the guidance of the Director of Engineering / Engineering Supervisor or designate, to maintain equipment and building in high standard and to ensure that the hotel gives the illusion to every arriving guest that they are the only person to have used the facility

Duties & Functions:

To be responsible for plant – chillers, AC, chilled water, Pumps, Boilers, including testing and maintenance
To attend to repair and maintain refrigeration equipment, chillers, walk in cooler and freezers
To ensure that Health & Safety legislation records are logged and maintained
To source and Contract suppliers as required
To organize schedules & method of works and risk assessments for plant related areas
To be on call for any plant emergency
To carry out PPM checks
To carry out all air conditioning and refrigeration system management and servicing
To participate in hotel energy conservation program
To attend all on job training in accordance with the departmental standard and procedures
To supervise the issue of tools relating to the Engineering department and their safe return
To be responsible for contractors working on site, their safety induction and maintenance of records of all jobs undertaken
To liaise with contractors and suppliers
To raise, accept and monitor POs
To accept deliveries in an appropriate and timely manner
To supervise the maintenance team any external contractors who may be employed by the hotel to carry out maintenance work
To ensure that all records in the areas of health and safety are kept up to date
To form part of the fire team and assist in any emergencies which may arise
To monitor the utility readings for the hotel to ensure good power management
To be aware of changes in regulations, environmental issues
To carry out other work which might reasonably be required and to be available for emergency callout
To work closely with Assistant Director of Engineering to help re-organize the department to ensure an efficient process of working
To plan small guest projects to ensure minimum impact
To oversee the team’s work and contractors’ work to ensure deadlines are met and work is completed to a set standard
Specific Job Knowledge & Skills:

Sound knowledge of mechanical, plumbing and electrical issues.
Understand fully the products and tools that are used within the department.
Electrical, mechanical and plumbing qualifications preferred.
One to two years in a public contact position, preferably in an upscale or lifestyle brand hotel
Enter and locate work related information using computers and/or point of sale systems
Possess a gracious, friendly, and fun demeanor
Ability to multitask, work in a fast paced environment and have a high level attention to detail
Strong verbal and written communication skills in English

Duties & Functions:

To carry out maintenance duties as required
To execute construction job including partitions, ceiling
To work under supervision in areas covered by statutory regulations (gas, electric, etc)
To supervise the issue of tools relating to the Engineering department and their safe return
To ensure that the Engineering workshop is at all times maintained in clean and tidy condition
To act as part of fire, life and safety committee and security when required
To ensure that all reported maintenance issues are completed in a timely manner
To ensure that that all preventative maintenance is carried out as directed by senior engineering personnel
To be able to prioritize all jobs on hotel expert in order to maximize guest satisfaction and minimize disruption to guests and staff alike
To carry out Painting and Decorating duties as required

To be accountable for all related tasks during shift and hand over if uncompleted

Duties & Functions:

Ensure all relevant food controls and correct temperatures are logged and adhered to at all time. Ensure the agreed standards of food preparation and presentation are adhered to at all times.
Ensure all daily paperwork is filled out in accordance to company and government guidelines.
Demonstrate a high standard of personal appearance, always wearing clean Chef’s whites changed daily or when necessary. Ensure good personal hygiene.
Check all prepared mis en place and food stocks (including dry stores) and replenish as necessary, and inform Executive Sous Chef of any relevant shortages.
Be aware of all relevant food suppliers and their products. Be in charge of ordering.
Supervise the smooth and efficient service and production of food from the department by working and liaising with other departments and Restaurant staff, and ensuring all necessary work is completed prior to the commencement of service.
To ensure all department staff work hygienically and productively. Ensure that the agreed standards of food preparation and presentation are supervised and adhered to.
To assist in the prevention of pilferage from the dry stores and refrigeration within the department. Control wastage by maintaining the correct stock levels and rotation from dry stores and avoid the over production of food and mis en place.
To ensure all working areas of the kitchen, dry stores and refrigeration are maintained in a clean and hygienic condition at all times, and especially after your shift has finished.
To make sure, in conjunction with your team that all section files and recipes are maintained and updated.
To maintain constant quality control of all food prepared and cooked ensuring it is to the Executive Chef and Restaurant standards.
To ensure all main cool rooms are tidy and clean at all times, especially after each service, so the Duty Chef can carry out daily ordering.
To report any problems, accidents or kitchen equipment defects to the Executive Chef.
To confirm with the Executive Chef any special requirements (including menu items and dishes), outstanding orders or work tasks required from your section.
Specific Job Knowledge & Skills:

Extensive experience in Arabic Cuisine
Must have knowledge of Food and Beverage preparation techniques, health department rules and regulations
GCC experience is must
Must have at least 2 years’ experience as chef de cuisine
Strong verbal and written communication skills in English and Arabic is must
Must have an excellent knowledge of HACCP standards

Job Purpose:

Under the general guidance of the Executive and Sous Chefs, is responsible for supervising and coordinating the activities of steward personnel engaged in dishwashing, sanitation, storage, and distribution of all types of tableware, kitchen utensils, and other Food & Beverage operating equipment.

Duties & Functions:

Ensures that working areas and equipment are hygienically clean and in order and that supplies are on hand with proper control, to ensure efficient service.
Conducts bi-monthly inventory of operating equipment in all outlets to ensure control of breakage & losses.
Initiates requisition for cleaning materials and other supplies to the minimum to prevent wastage & misuse.
Schedules Daily, weekly, & periodically cleaning of food production outlets and equipment.
Ensures that proper hygiene & sanitation is observed in all areas including the staff cafeteria.
Monitors the consumption of chemicals in all machines & wash-up areas.
To have complete understanding of and adhere to the company’s policy relating to fire, hygiene and safety

Participates in all activities related to Municipality Food Hygiene meeting, Assured Safe Catering Program, etc.

Exercises administrative supervision over all stewarding personnel that include personnel requisition, promotion, granting of disciplinary action, training, rosters, and overtime requests.
To have complete document of all stewarding activities such as:
Daily Hygiene checklist/ Assured Safe Catering
Training records
F&B operating equipment records
Pending Maintenance Records

Specific Job Knowledge & Skills:

High School Diploma or equivalent required
Minimum two to five years of management experience in an accredited restaurant or hotel
One to two years in a public contact position, preferably in an upscale or lifestyle brand hotel
